Why I like it: A truly wonderful sparkling wine. World class. Hand picked from several regions in Tasmania, notably the southern Coal River. Made using the Method Traditional, where secondary fermentation happens in the bottle, the wine spent 72 months on less in tirage. It has enormous power, and complexity yet it very soft and supple to drink. Amazing!
