Why I like it: Devil’s Lair 9th Chamber Cabernet Sauvignon is made only in exceptional vintages and Margaret River was blessed with a stunning 2017 season. One of the latest on record this stunning parcel of grapes revelled in an extended ripening that gave great richness and depth of flavour. This outstanding parcel of cabernet was fermented and soaked on skins for 3 weeks and then pressed into 100% new French oak barriques. This wine will continue to mature gracefully for many years and will benefit from decanting prior to enjoying.
